The reason Roma is preferred for canning and Sauce is because of the much lower water content. The sauce will cook down faster. They also tend to keep longer (fresh). Because of the high demand, longer shelf life, and smaller size as well, they are usually more expensive. It takes a whole lot more Roma to fill a box than Big Beef for example.

We are no longer offering “Canner Tomatoes” as in slightly damaged. As I leveled up my own canning “game” I learned that for best results one should use the best quality fruits and vegetables to preserve. While a spot or wrinkle here and there is just fine, ideally you want Grade A. And this is what we offer.
